Maréchal Foch Piquette 2019
Blend of Apple Water Fermented on Maréchal Foch Grape Skins.
A session cider-wine hybrid of sorts. Maréchal Foch is one hell of a grape. High acid, with baker's chocolate bitterness, it's vibrant and alive. Revel were lucky this year to find a vigneron in Lincoln who had 47 year old Maréchal Foch planted.
After whole cluster pressing the grapes, they added the skins to the last of their apple water from 2018. 24 hours later they strained them out to give us this gorgeous little thing.
Wild ferment, zero added sulphites. 48 cases produced.
*Revel made apple water last winter by letting apple juice freeze outside. After decanting the concentrated juice, they thawed out the blocks of ice left behind.
